It’s the weekend, the sun is shining and it’s time to fire up the grill and invite some mates over. We love this pork satay skewer recipe from Pit Crew BBQ, it’s super simple and oh so tasty!
This crew of barbie experts have used locally sourced Byron Bay pork rib off-cuts marinated in cumin, coriander, turmeric, ginger and garlic to create a recipe bursting with spicy flavour.
Ingredients
- Pork rib off-cuts marinated in cumin, coriander, turmeric, ginger and garlic
- Lime juice, chopped chilli and shredded kafir lime leaf
- Rice, cucumber & tomato salad and a simple peanut sauce
Method
1. Marinate pork rib off-cuts with the following spices – cumin, coriander, turmeric, ginger and garlic.
2. Fire up the barbie and grill the pork swords over Heat Beads original briquettes for close to an hour letting the flavours build from the smoke and marinate juices.
3. Once cooked, leave the skewers to rest. Drizzle with a little lime juice, chopped chilli and shredded kafir lime leaf.
4. Accompany with rice, cucumber & tomato salad and a simple peanut sauce.
4. Serve on an Eco Food Board and bon appetite!
